You are looking at your water. Here in Tampa Bay, where our supply runs hard off the limestone aquifer, cloudy ice is one of the most common calls I get from bars, restaurants, and hotels. The good news: the usual causes are water and maintenance, and an operator can clear most of them. Here is how a technician reads a commercial ice machine that is turning out cloudy ice, what to fix first, and the one version of cloudy ice that is a food safety problem you cannot ignore.
A cube machine makes clear ice by freezing water slowly and evenly so minerals and air get pushed out. Cloudy ice means that is being disrupted, and it comes down to three things: hard water minerals (the leading cause, and Tampa water is hard), a clogged or neglected filter, or a slow freeze trapping air from a dirty condenser, a hot room, or a scaled evaporator. Scale from hard water ties them all together.

Understanding the how points you straight at the fix. A commercial cuber freezes water slowly across a cold plate so that as the ice builds, dissolved minerals and tiny air bubbles get pushed ahead of the freeze and washed away, leaving a clear cube. Cloudy or white ice means that clean freeze is being interrupted in one of two ways: there are simply too many dissolved minerals in the water to push out, or the freeze is too slow or uneven and air gets trapped before it can escape. Almost every cause below is a version of one of those two things. It is rarely the machine failing. It is the water or the upkeep asking for attention.

Our region draws from the Floridan aquifer, which runs through limestone and picks up a heavy load of dissolved calcium and magnesium along the way. Water that carries that many minerals commonly tests in the hard to very hard range, and that is exactly the water that clouds ice and coats the inside of a machine with scale. The most common reason for cloudy commercial ice is simply too many minerals in the incoming water. When the concentration of dissolved calcium, magnesium, and sediment is high, the freeze cannot push all of it out, and it stays locked in the cube as a milky haze. In a hard water region like ours this is the default cause, and it gets worse the longer filtration is ignored. The fix is to test your water hardness and match your treatment to it: a proper filter for moderately hard water, and for very hard water a scale reducing or softening setup ahead of the machine. Treat the water and the ice clears, and as a bonus your machine stops scaling up and lasts longer.
Filtration is the direct lever on water quality, and it is the one operators forget. A clogged, old, or entirely absent filter lets minerals and sediment pass straight into the machine, so the ice clouds and, just as important, scale builds up inside. Put in a filter suited to Tampa water, ideally one that handles both sediment and scale, and replace it on a schedule, about every six months, or sooner in a high volume bar. On very hard water a single cartridge sometimes is not enough and a larger scale reducing system earns its keep. A machine whose ice slowly clouded over a season very often just needs a fresh, correct filter.
The other path to cloudy ice is the freeze itself. When the machine freezes water too slowly or unevenly, air does not have time to escape and gets trapped as white haze, even with decent water. A slow freeze almost always traces back to maintenance. A dirty condenser or a hot, poorly ventilated room raises the operating temperature and drags the freeze out, and this matters a lot in a Florida kitchen where the machine may sit in a warm back room. Scale on the evaporator plate insulates it like a blanket and slows the freeze further, which is the hard water problem coming back around. Clean the condenser coil, give the machine breathing room and airflow, and descale the evaporator, and the freeze speeds back up and the ice clears.
Cloudy plus an odor or a colored film is a health issue, not a water issue.
Cloudy ice from minerals is unappealing but usually safe. Cloudy ice that comes with a sour or musty smell, or a pink, orange, or black film inside the machine, is slime and mold. Ice is a food, and a dirty ice machine is one of the most common things a Tampa health inspector writes up. If you see or smell this, take the machine offline, throw out the ice, and run a full clean and sanitize before you make ice again. Then keep it on a sanitizing schedule so it does not come back.

Why is my commercial ice machine making cloudy ice?

When the ice stays cloudy after you have treated the water, replaced the filter, and cleaned and descaled the machine, since a slow freeze from a sealed system fault then needs a technician with gauges. Also call for water treatment design if your water is very hard, or for a deep clean if slime and mold keep coming back. In a busy kitchen a maintenance plan is usually cheaper than the downtime.
